This year, our much-loved Pisco & Ceviche Masterclass takes on an even deeper meaning as we gather on Peru Independence Day, a national celebration that commemorates Peru's declaration of independence in 1821 and honours the country's rich history, traditions, and cultural identity.
There is no better occasion to immerse yourself in the soul of Peruvian cuisine through two of its most iconic creations: ceviche and pisco. More than just recipes, they are expressions of heritage, crafted with precision, passion, and a deep respect for culture.
In this interactive masterclass, you'll learn the art behind crafting the perfect Pisco Sour — shaken, balanced, and unmistakably Peruvian — before sampling a curated selection of the country's most exclusive piscos.
Head Chef Ayu Dwi and Chef Andrea Chang will then guide you through the refined craft of ceviche. From selecting the most pristine seasonal seafood to balancing acidity, heat, and texture, Ayu and Andrea share their personal techniques and insights, honed over years and finessed to plated perfection.
