AMAZONAS – A Vibrant Flavour Expedition into the Heart of the Jungle

Venture into the depths of the Peruvian Amazon, where ancient traditions and untamed landscapes inspire a dining experience unlike any other. At Amazonas, Head Chef Dwi Ayu invites you on an evocative discovery of the flavours and techniques of the world’s grandest rainforest.

Our chefs have sourced rare, seldom-seen ingredients and crafted them into a truly remarkable menu for this year, fired by centuries-old cooking techniques. From braised wild boar wrapped in green plantain to delicately poached scarlet prawns in tumbo tiger’s milk, venison tataki with fiery ají charapita, and crocodile fillet smoked in banana leaf with jungle herbs, each dish tells its own story of the region’s rich biodiversity and cultural traditions.

This long lunch will be a rare encounter into Amazonian cuisine most never taste beyond the jungle itself, with dishes that are at once refined, daring, and deeply rooted in history.
